Banana squares - always a hit!

Banana squares are always very popular and I like to make them when we have visitors coming.
There are countless recipes for this delicacy and I have already tried a few.

But here I share my favorite recipe with you.
Ingredients for the base:
5 eggs
250g flour
100ml oil
100ml milk
1 teaspoon baking powder
200g sugar
Ingredients for the cream:
1 pack of vanilla pudding powder
400ml milk
3 tablespoons sugar
200ml cream
Ingredients for the glaze:
70-80g butter
140g cooking chocolate
remaining ingredients:
5-6 bananas
Jam (normally you use apricot jam, I like to use my homemade strawberry-banana jam)
Preparation:
First, make the pudding so that it has enough time to cool down. To do this, take a few tablespoons of the milk and stir it with the pudding powder and sugar until smooth and the sugar has dissolved. In the meantime, bring the remaining milk to the boil. Tip: the milk really has to boil so that the pudding sets. Now stir the milk-pudding-sugar mixture into the boiled milk. You will notice how the pudding thickens. Now put the pudding in the fridge.
Separate the eggs and beat the yolks with the sugar until the mixture becomes light
Add milk and oil and continue stirring
now stir in the flour and baking powder
Preheat the oven to 200 degrees.
Beat the egg whites until stiff and fold into the dough. Do not stir! Just fold in.
The dough is now spread on a baking tray lined with baking paper and baked for approx. 20 minutes at 200 degrees O/B.
Allow the base to cool slightly and then spread with a thin layer of jam.
Cut the bananas into slices and spread them on the jam layer.
Now the cream is whipped until stiff and stirred into the cooled pudding.
You then spread this cream evenly over the bananas.
A little tip: put the banana squares on a cool spot so that the cream cools and firms up before you make the icing. This way the two don't combine so quickly and you can spread the chocolate icing more easily.
For the glaze, melt the chocolate and butter together over a water bath. If the glaze feels too thick, you can add a little more butter. The glaze should have a nice shine.
Now you can spread the chocolate on the slices and cool everything again until the glaze has set.
Just cut everything into pieces and enjoy!
I have another tip for you:
When you take the base out of the oven, turn it out onto a new baking sheet and let it cool down. This will help prevent the base from sticking to the baking sheet when you want to take a piece.
