Plum cake - versatile and quick to make

I had some plums left over—so what should I make with them? Jam? Compote?

After a phone call with my mom, who told me she made plum cake, I knew what to do with mine.

Correct: plum cake :D

I quickly asked for the recipe and baked it straight away.



Ingredients:
  • 5 eggs

  • Plums (I used 8)

  • 250g flour

  • 250g sugar (I use less - about 200-220g)

  • 125ml oil

  • 125ml water

  • 1 pack baking powder

  • 1 pack vanilla sugar

  • 1 pinch of salt


Preparation:
  • First, separate the eggs and beat the egg yolks with the sugar and vanilla sugar until frothy.

  • Preheat the oven to 180 degrees top/bottom and line a baking tray with baking paper.

  • Slowly stir in the oil and milk.

  • Combine the flour and baking powder and add to the dough. Then mix everything until a smooth dough forms.

  • Now beat the egg whites with the salt until stiff peaks form. Then fold the mixture into the batter.

  • The dough is now spread onto the baking tray and topped with the halved plums (cut side up).

  • The cake is now placed in the oven for about 30 minutes until it is golden brown.

  • After cooling, you can sprinkle the cake with powdered sugar before serving.



Tip: Of course, this cake doesn't just work with plums. In Austria, for example, it's a classic with apricots. But cherries also always work well.
