Plum cake - versatile and quick to make

I had some plums left over—so what should I make with them? Jam? Compote?
After a phone call with my mom, who told me she made plum cake, I knew what to do with mine.
Correct: plum cake :D
I quickly asked for the recipe and baked it straight away.

Ingredients:
5 eggs
Plums (I used 8)
250g flour
250g sugar (I use less - about 200-220g)
125ml oil
125ml water
1 pack baking powder
1 pack vanilla sugar
1 pinch of salt
Preparation:
First, separate the eggs and beat the egg yolks with the sugar and vanilla sugar until frothy.
Preheat the oven to 180 degrees top/bottom and line a baking tray with baking paper.
Slowly stir in the oil and milk.
Combine the flour and baking powder and add to the dough. Then mix everything until a smooth dough forms.
Now beat the egg whites with the salt until stiff peaks form. Then fold the mixture into the batter.
The dough is now spread onto the baking tray and topped with the halved plums (cut side up).
The cake is now placed in the oven for about 30 minutes until it is golden brown.
After cooling, you can sprinkle the cake with powdered sugar before serving.

Tip: Of course, this cake doesn't just work with plums. In Austria, for example, it's a classic with apricots. But cherries also always work well.
