Too much chives in the garden?

I think chives are trying to take over the world in my garden. Since I still have some frozen, I quickly made a chive sauce with potatoes. Simple, but incredibly delicious!

Ingredients:
20g butter
20g flour
125ml milk
1 pinch of salt
1 pinch of nutmeg
1 bunch of chives (I like to use more)
125g sour cream
Preparation:
Melt the butter in a saucepan, add the flour and fry for 1-2 minutes while stirring constantly.
Add the milk slowly and continue stirring vigorously (preferably with a whisk). There should be no lumps.
Now everything is seasoned with salt and nutmeg, I also like to add some pepper and garlic powder.
The sauce is now cooked until it thickens. It's important to stir regularly to prevent it from burning.
The chives are now washed and cut into small rolls and added to the sauce, but the sauce should not boil any longer.
I prefer to eat the sauce with potatoes. If you want meat, you can add boiled beef or fried sausages. You can also serve dumplings instead of potatoes.
