A Topfen-Grieß-Auflauf is a classic Austrian dish that combines a casserole made from Topfen (quark) and Grieß (durum wheat semolina). The casserole is often sweet and is usually served as a dessert, but can also be enjoyed as a snack.

The main ingredients are:
- Quark: It provides the creamy texture and the characteristic taste.
- Semolina: Gives the casserole a certain firmness.
- Eggs: They act as a binding agent and make the casserole airy.
- Sugar: For sweetness, optionally vanilla sugar or cinnamon can be added.
- Milk or cream: Often used to refine the consistency.
- Fruits: Sometimes fruits, such as apples or berries, are added to provide additional freshness and flavor.
It is usually prepared by mixing the ingredients together and pouring them into a casserole dish. The casserole is then baked in the oven until golden brown and set. It can be served warm or cold, often with a dusting of icing sugar or a side of compote or cream.
The curd and semolina casserole is very popular in Austria and is often prepared in traditional households.
Now I'll tell you my recipe for a curd and semolina casserole with peaches.
Ingredients:
4 eggs
1 pinch of salt
100g butter
100g sugar
1 pack of vanilla sugar
500g low-fat curd cheese
80g semolina
1 can of peach halves
Preparation:
Separate the eggs and beat the egg whites with salt until stiff.
Now beat the egg yolks, butter, sugar and vanilla sugar until creamy.
Stir in the curd and semolina.
Finally, the snow is folded in.
Open the can of peaches and let them drain.
Preheat the oven.
Cut the peaches into wedges.
Now butter the casserole dish, pour in the mixture and distribute the peach slices on top.
The casserole is baked for about 30 minutes at 180 degrees hot air.
